Levi Roots’ pineapple and rum granita recipe

Served in pretty glasses, this boozy granita looks impressive but couldn't be simpler to make. Says Levi of this recipe: "A bit of cheat this as I just use bought pineapple juice for it. But it makes a very easy and great cooling pud after a hot barbecue." We couldn't agree more!

Serves: 8
Ingredients
600ml (1 pint) pineapple juice
100g (3½oz) sugar
Rind and juice of 3 limes
5 tbsp white rum
Method
- Gently heat the pineapple juice with the sugar and lime rind in a saucepan over a low heat, stirring occasionally, until the sugar has dissolved. Set aside to cool completely.
- Mix the lime juice and rum together in a bowl. Add the pineapple mixture and stir to combine. Pour into a shallow container and freeze for 24 hours (this granita takes longer to freeze than most ices due to the alcohol), breaking up the ice crystals using a fork four or five times during the freezing process.
- Remove from the freezer just before serving as it melts quickly due to the high alcohol content.
