Though it's not officially a cake or bread (more of a shortcrust pastry really) we didn't want to get through a list of delicious Easter treats without mentioning the gaudily decorative Polish mazurek. This traditional cake usually takes the form of a large, flat base which is then filled with jam, preserve or flavoured creams and decorated with dried fruits, nuts or confectionary.

well this pic of a Simnel cake doesn't look very appetising - it looks burnt, should have covered the top part way through baking to stop it burning. Also - where is the marzipan in the middle?
