Italian baker and businessman Angelo Motta made his fortune selling his speciality Motta Foods panettone at Christmas time. But what could he do tokeep him going in spring? Luckily, he hit on the idea of popularising the colomba di pasquale - a traditional dove-shaped bread similar in taste and texture to its much-more-famous cousin panettone. It's now one of Italy's most popular cakes for Easter. True.
